1cupreserved pasta wateras needed
24ouncescherry or grape tomatoeshalved
8ouncesfresh mozzarelladrained and cut into bite-sized pieces
6tablespoonsextra virgin olive oil
6garlic clovesthinly sliced or minced
2teaspoonsItalian seasoning
1teaspooncrushed red pepper flakesoptional
salt and pepper
½cuppacked fresh basil leavestorn
Instructions
Bring a large pot of salted water to a boil. Cook the pasta until al dente, about 10 minutes. Reserve 1 cup of pasta water, then drain.
Meanwhile, heat olive oil in a large skillet over medium heat. Add the garlic, Italian seasoning, and red pepper flakes and cook for about 1 minute.
Add the tomatoes and cook for 4 to 5 minutes, stirring occasionally, until softened and juicy.
Add the drained pasta and ½ cup of the reserved pasta water to the skillet. Toss until the pasta is evenly coated, adding more pasta water as needed. Taste and season with salt and pepper.
Remove skillet from heat. Toss in torn basil and mozzarella. Serve and enjoy!
