Easy Pork Adobo Recipe (with Sprite)

This easy Pork Adobo is rich and savory, a little sweet, and a whole lot garlicky. Seared pork belly glistening in fat, simmered in a thick, savory sauce. It's simple, but addictive. Like, extra cup of rice addictive.

Ingredients

  • 4-5 bulbs of garlic minced
  • 1 ½ pounds pork belly cut into 2-inch cubes
  • Oil for frying
  • 1 cracked peppercorns
  • 2 pieces bay leaf
  • 2 cups Sprite
  • cup white vinegar
  • cup soy sauce

Instructions

  1. Mince the garlic and cut the pork belly into 2-inch cubes.
  2. Heat oil in a large pan. Sear the pork belly until lightly browned. Remove from the pan and set aside.
  3. Sauté the minced garlic until lightly browned, about 5 to 7 minutes. Add the peppercorns and bay leaf, then cook for 1 to 2 more minutes.
  4. Return the pork to the pan and pour in the Sprite. Bring to a boil, then reduce the heat, cover, and simmer until the pork is tender, about 45 minutes.
  5. Add the vinegar and soy sauce. Cook for another 15 to 20 minutes, stirring occasionally, until the sauce reduces to your desired thickness.
  6. Serve over rice and enjoy!
