These Cheesy Ground Beef Quesadillas feature a savory beef filling and gooey melted cheese tucked inside a crispy golden tortilla. So good and so easy to make!

Ingredients

  • 1 tablespoon oil
  • 1 pound ground beef
  • ½ onion diced
  • ½ bell pepper diced
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • 2 tablespoons tomato paste
  • ½ cup water
  • 6 large flour tortillas
  • 3 cups shredded cheese

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add the onion and bell pepper. Saute for 3 to 4 minutes, or until softened. Remove from pan and set aside.
  2. Add ground beef to the pan and cook until browned, breaking it into crumbles as it cooks. Drain excess grease if desired.
  3. Add the vegetables back in. Stir in salt, pepper, garlic powder, chili powder, paprika, cumin, and tomato paste. Cook for 1 minute.
  4. Pour water and stir until the mixture thickens slightly, about 1 minute. Remove from heat.
  5. Place a tortilla on a griddle or skillet. Sprinkle cheese over one half. Top with the ground beef mixture, then add more cheese. Fold the tortilla in half.
  6. Cook on medium heat for 1-2 minutes, or until the tortilla is golden brown. Flip and cook the other side for about 30 seconds. Repeat with the remaining quesadillas.
  7. Cut into wedges and serve. Enjoy!
