Hamburger Steak with Mushroom Gravy (Jollibee Burger Steak)

This Hamburger Steak with Mushroom Gravy has juicy beef patties smothered in a rich, savory mushroom gravy.

Think of it like Salisbury steak’s Filipino cousin. The patties are simple, the gravy is loaded with mushrooms, and instead of mashed potatoes, it’s served with rice. 

It’s one of my go-to orders at Jollibee, but I realized it’s actually so easy to make at home. Plus, making it yourself means thicker patties, more mushrooms, and as much gravy as you want.

Ingredients You’ll Need

  • Ground beef. Use 80/20 ground beef for juicy, flavorful patties.
  • Breadcrumbs and egg. Help bind the patties together and keep them tender.
  • Seasonings. Onion powder, garlic powder, Worcestershire sauce, salt, and pepper add flavor to the burger steaks.
  • Mushrooms. Fresh mushrooms add a deeper flavor to the gravy, but canned mushrooms also work.
  • Butter and flour. Create the base of the gravy and help thicken the sauce.
  • Beef broth. Gives the gravy its rich, savory flavor.
  • Soy sauce and Worcestershire sauce. Add more depth and that umami burger steak flavor.
  • Sugar. Just a little to balance the savory flavors in the gravy.

How to Make Hamburger Steak with Gravy

1. Make the burger patties.

Combine ground beef, breadcrumbs, egg, Worcestershire sauce, onion powder, garlic powder, salt, and pepper. Mix until just combined, then shape into patties.

2. Sear the patties.

Heat oil in a skillet over medium-high heat. Cook the patties for 3-4 minutes per side until browned and cooked through. Remove from the pan and set aside.

3. Sauté the mushrooms.

In the same pan, melt the butter. Add the mushrooms and sauté for 5-7 minutes until browned.

4. Make the mushroom gravy.

Add the flour and cook for 2-3 minutes, stirring constantly. Slowly pour in the beef broth while whisking until smooth.

5. Season the gravy.

Add the soy sauce, Worcestershire sauce, onion powder, garlic powder, black pepper, and sugar. Simmer for 3-5 minutes until thickened.

6. Simmer and serve.

Return the burger patties to the pan and simmer for another 2-3 minutes. Serve with steamed rice and extra mushroom gravy.

Tips and Variations for the Best Burger Steak

  • Don’t overmix the beef. Mix the ingredients until just combined. Overworking the meat will make the patties tough.
  • Use ground beef with some fat. An 80/20 blend works best because the extra fat keeps the burger steaks juicy and flavorful.
  • Use a different protein. Swap the ground beef with ground chicken, turkey, or pork. Just keep in mind that leaner meats won’t be as juicy.
  • Switch up the mushrooms. Button, cremini, or baby bella mushrooms all work well for the gravy. You can also use canned mushrooms for a more classic Jollibee-style flavor.
  • Add more flavor to the patties. Mix in finely chopped onions, garlic, or your favorite seasonings to customize the flavor.
  • Make it extra creamy. Stir a splash of heavy cream or milk into the gravy for a richer, creamier sauce.
  • Use a different broth. Beef broth gives the gravy a deeper flavor, but chicken broth works in a pinch.

What to Serve with Hamburger Steak

Hamburger steak is perfect with rice to soak up all that mushroom gravy. You can also serve it with mashed potatoes, roasted vegetables, buttered corn, or any side you’d enjoy with a burger. 

How to Store and Reheat

To Store: Let the hamburger steak cool completely, then transfer it to an airtight container. Refrigerate for up to 4 days.

To Reheat: Warm on the stove over low heat until heated through. Add a splash of beef broth or water if the gravy gets too thick.

Can I make hamburger steak ahead of time?

Yes. You can make the patties ahead and store them in the fridge for up to 24 hours before cooking. You can also cook the whole dish ahead of time and reheat it on the stove until warmed through.

Can I freeze hamburger steak?

Yes. Let the hamburger steak cool completely, then store the patties and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the fridge and reheat on the stove, adding a splash of broth or water to loosen the gravy if needed.

  • Chopped green onions for garnish

Instructions

  1. Combine the ground beef, breadcrumbs, egg, Worcestershire sauce, onion powder, garlic powder, salt, and pepper. Mix until just combined, then shape into thin oval patties.
  2. Heat oil in a skillet over medium-high heat. Sear the patties for 3-4 minutes per side until browned and cooked through. Remove from the pan and set aside.
  3. In the same pan, melt the butter. Add the mushrooms and sauté for 5-7 minutes until browned.
