I love going out for Korean BBQ. It’s always a fun time, but sometimes I don’t feel like grilling my own food. And the smell that sticks to your clothes afterward is wild!

So, let’s make Korean BBQ at home instead. These short ribs are incredibly easy, packed with savory, umami-rich flavor, and only take 6 to 8 minutes to air fry.

Korean Short Rib Marinade

The marinade for these air fryer Korean short ribs is simple but packed with savory, slightly sweet, and umami-rich flavors.

I use garlic powder, onion powder, and ground ginger for convenience. If you’re willing to put in the extra time and effort, you can use fresh garlic, onion, and ginger instead.

Here’s what you’ll need for the marinade:

  • Soy sauce
  • Mirin
  • Water
  • Sesame oil
  • Garlic powder
  • Onion powder
  • Ground ginger
  • Black pepper
  • Sesame seeds

How to Cook Beef Short Ribs in the Air Fryer

You don’t need a grill to make delicious Korean short ribs. The air fryer cooks the thin-cut beef quickly at high heat, giving you tender meat with browned, caramelized edges in just a few minutes.

1. Make the Marinade

Whisk the soy sauce, mirin, water, sesame oil, garlic powder, onion powder, ground ginger, black pepper, and sesame seeds together in a bowl.

2. Marinate the Short Ribs

Add the beef short ribs and toss until well coated. Cover and refrigerate for at least 1 hour.

3. Preheat the Air Fryer

Lightly brush or spray the air fryer basket with oil. Preheat to 400°F for 5 minutes.

4. Air Fry

Let the excess marinade drip off the short ribs, then arrange them in a single layer in the basket. Air fry at 400°F for 6 to 8 minutes, flipping halfway through.

5. Cut and Serve

Transfer the short ribs to a plate. Use kitchen scissors to cut them into smaller, bite-sized pieces. Garnish with chopped green onions, if using. Serve and enjoy!

Tips for the Best Air Fryer Beef Short Ribs

  • Preheat the air fryer. A hot basket helps the beef start browning right away.
  • Don’t overcrowd the basket. Arrange the short ribs in a single layer and cook in batches if necessary.
  • Flip halfway through. This helps both sides cook and brown evenly.
  • Use kitchen scissors. They make it easy to cut the cooked short ribs into bite-sized pieces.

What to Serve with Korean Beef Short Ribs

For a complete Korean-style meal, serve these air fryer beef short ribs with banchan, the small side dishes traditionally served alongside Korean meals.

  • Steamed white rice
  • Kimchi
  • Korean cucumber salad
  • Korean potato salad
  • Korean steamed egg
  • Scallion salad

Try them as lettuce wraps, too! Korean short ribs are great wrapped in crisp lettuce with a little rice, kimchi, and your favorite banchan.
